Ezra Allen runs Cane Collective in NYC and he is my go-to for custom cocktail syrups and advanced beverage production. If a bar program needs house-made ingredients that a bartender cannot realistically produce during a Sunday reset, Ezra is the call.

What Cane Collective actually does

Most bar programs promise house-made and deliver in-house. The two are not the same thing. In-house means a bartender squeezing citrus at 3pm before a Friday shift, and it means the program dies the first time a key bartender quits or gets sick. House-made, done right, is a production-quality ingredient built to specification, batched consistently, and shelf-stable enough to survive a real service week.

Ezra runs the production side properly. Cane Collective handles:

  • House orgeats, cordials, shrubs, and infusions at production volume
  • Shelf-stable batching so the ingredient survives more than three days behind the bar

The difference between a bartender making a cordial in a walk-in and a real production kitchen doing it is the same difference as a home cook versus a line cook: same ingredients, entirely different consistency, cost, and yield.

Why the labor math matters

Every bar owner has done the same napkin math. "We could just make it in-house." The problem is that in-house production is a hidden labor line. A bartender on citrus and cordials for two hours a day is a full FTE by the end of the year, and that labor is priced at bartender wage, not prep cook wage. Outsourcing the production to a real facility is almost always cheaper, and it is always more consistent.
