Opening construction and the full cocktail program at One World Observatory.

One World Observatory is the observation deck and hospitality venue at the top of One World Trade Center. It is one of the most-visited landmark venues in New York City, and one of the highest-visibility hospitality openings a bar program can be attached to.

The problem

Opening a landmark venue is a construction problem before it is a beverage problem. The bar has to be designed against the physical footprint that is still being built, the equipment has to be specified before the fit-out is closed, and the program has to be trained against a staffing plan that is being hired in parallel. If the cocktail program shows up after construction is done, the bar is always working around decisions someone else made.

One World Observatory needed a beverage lead who could sit inside the construction phase and make the physical and programmatic decisions at the same time.

What Jason built

Opening construction consult plus the full cocktail program build. That meant participating in the bar-design decisions during construction, specifying the equipment and workflow footprint before the fit-out was closed, and then delivering the full Launch45 scope on top of it: menu, specs, and training staff who were coming into a venue that had never opened before.
